Ghee: Its Chemistry, Processing and Technology

ABSTRACT

Conclusion: The ghee industry, though large, is still a home industry in India. Increasing demand of this milk product requires overhauling all production and marketing practices. Development of continous ghee making equipment is urgently needed so that hygienically prepated ghee with uniform quality can be made available at an economical price.
