On page 457, under "Fat and Nitrogen Recovery and Yield", the equations [4] and [5] need further clarification. The corrected equations should read as follows:
The percentage fat in cheese can be calculated as follows:

The percentage total solids in cheese can be calculated as follows:

Because the weight components (milk and cheese weights) get cancelled out when equations [4] and [5] were substituted into equation [3], that is, in the calculation of FDM, we had not previously included the weight components in equations [4] and [5].
