The Trier Compared with the Wedge Method of Sampling Tub Butter

H. B. Ellenberger and E. S. Guthrie

University of Vermont, Burlington, Vermont
Cornell University, Ithaca, New York

ABSTRACT

The wedge method of sampling seems to be the most nearly accurate, as shown by Ellenberger's moisture analyses and Guthrie's moisture and fat analyses; but it also seems reasonable to take a diagonal sample first, because this is easily obtained without removing much butter from the package. If this sample gives indications of a low fat content, a second sample can then be taken by the wedge method.
