Food Research: Past, Present, and Future

Research accomplishments and future trends in a given field can be described in terms of number and quality of publications, impact of findings on the clientele of researchers, or the notoriety of researchers. The present discussion will give an overview of past and present publications on dairy technology and of selected research topics that illustrate the evolution of some important innovations and how a variety of disciplines interacted to foster these developments.
