ABSTRACT
Uridine and uracil were isolated from samples of caprine (goat) milk by preparative high performance liquid chromatography and identified by spectroscopic methods. An analytical high performance liquid chromatography method was developed to determine accurately the concentrations of these two compounds in samples of fresh and stored (4°C) raw, condensed, or reconstituted powdered caprine milk. Unlike samples of bovine milk tested, all caprine fresh milk samples contained readily measurable uridine (30 to 40 µg/ml). The concentration of this nucleoside increased upon brief storage of raw milk but not upon storage of reconstituted condensed and powdered milks. After prolonged storage (>10 to 14 days), uridine concentrations fell, and uracil concentrations increased. Amounts of uridine and uracil in caprine milk, as determined by this simple and rapid high performance assay, may be useful indicators of product quality and authenticity.
