Characterization of Lipase in Mare Milk

Yves Chilliard and Michel Doreau

Laboratoire de la Lactation, INRA, Theix 63122-Ceyrat, France

ABSTRACT

High lipase activity was in mare milk. This activity had characteristics of a lipoprotein lipase, blood serum dependence, thermolability, and sodium chloride sensitivity. The apparent Michaelis constant of this enzyme was .21 mM with activated intralipid triglycerides as a substrate. Lipase activity was not affected significantly by heparin.
