Positioning the Dairy Industry to Meet Nutrition Issues of the ‘80’s: A Workshop

W. L. Dunkley

Department of Food Science and Technology, University of California, Davis 95616

ABSTRACT

Representatives of California's dairy industry participated in a 2-day workshop to examine nutrition issues the industry is likely to face in the 1980's and to develop recommendations to best manage the issues. The participants included producers, processors, and representatives of industry organizations with dairy, food, and nutrition scientists from the University of California as resource personnel.

Background papers were distributed to all participants before the workshop. A questionnaire assessed opinions of the participants regarding selected topics and served to identify issues that were important and the extent of agreement regarding them. At the workshop small work groups analyzed issues in depth and made recommendations to be considered by the whole group.

This report includes the background papers and recommendations to the California dairy industry regarding positions in relation to selected nutrition issues. The background papers summarized information relevant to the workshop objectives: 1) to identify options the dairy industry can use in responding to current dietary trends and recommendations of public agencies, and 2) to develop steps for action for positioning the dairy industry to meet nutritional issues of the 80's.
