ABSTRACT
Gel filtration chromatography on a semi-rigid gel matrix, Fractogel TSK HW55F (equivalent to Toyopearl HW 55F), was examined to analyze bovine milk whey components. Chromatography with Fractogel was reasonably rapid, and the useful working range for proteins and peptides was in the molecular weight range up to 106 daltons. Chromatographic profiles of bovine whey showed satisfactory resolution over the vast range of molecular weight from 102 to 106 daltons. Four protein peaks, a protein shoulder, and five low molecular weight fractions were observed. Immunoglobulin Gl, serum albumin, ß-lactoglobulin,
-lactalbumin, orotic acid, and uric acid were assigned to each elution peak from their elution position. Chromatographic profile of colostral whey in immunoglobulin Gl fraction and low molecular weight fractions was different from that of normal whey.
