Interaction of Casein with Diethylaminoethyl-Dextran in Aqueous Solutions: Isolation of {alpha}s-Caseins

ABSTRACT

The composition of a casein precipitated from whole cow casein solutions by diethylaminoethyl-dextran was studied with the aid of gel-electrophoresis. The insoluble casein-dextran complexes included predominantly {alpha}s-caseins. Complexing of whole casein with polycations may be used for separation of casein fractions.
