Characterization of Pregastric Esterases

H. J. Lee, N. F. Olson and D. S. Ryan

Department of Food Science, University of Wisconsin, Madison 53706

ABSTRACT

Sephadex gel chromatography and polyacrylamide gel electrophoresis were used to estimate molecular weights and demonstrate heterogeneity of pregastric esterases obtained from commercial extracts of sublingual tissue of calves, kids, and lambs. The molecular weights of calf, kid, and lamb esterases were approximately 172,000, 168,000, and 150,000. Each esterase preparation appeared to contain several enzymes that had similar molecular weights and electrophoretic mobilities.
