ABSTRACT
Butylated hydroxyanisole, butylated hydroxy toluene, and sodium erythorbate were added to reconstituted nonfat dry milk (11% total solids) prior to culturing with lactic acid starter cultures at 72°C. Butylated hydroxytoluene up to 50 ppm did not affect acid production or diacetyl accumulation in the cultures. Butylated hydroxyanisole at 10, 25, and 50 ppm inhibited diacetyl production or accumulation but not acid production. Inhibition at 10 and 25 ppm was only after 18 h incubation. However, at 50 ppm diacetyl accumulation was inhibited after 18, 24, and 36 h of incubation. Sodium erythorbate concentrations of .10 and .25% stimulated diacetyl production or accumulation after every incubation period. The amount of stimulation ranged from 38 to 108%. Increasing erythorbate above .10% did not increase the degree of stimulation. There was no culture effect in any of the experiments.
