Characteristics of Concentrated Yogurt (Labneh) Produced in Israel

ABSTRACT

Homemade concentrated yogurt covered with oil (Labneh) originated in the Arab sector of Israeli population. Analyses revealed a traditional dairy product with keeping qualities ideally suited for hot climates.
