ABSTRACT
A program is presented to assist management in controlling water and waste in a dairy processing plant. Four phases of an educational program are presented emphasizing the need for and use of an in-plant water and waste supervisor. The educational program designed for a minimum of 10 h stresses the need for minimizing water use and waste discharge to achieve economic and environmental goals. The correlation between water use, waste load, and product losses is explained.
