ABSTRACT
The possible removal of lipase activity in concentrated Mucor rennet preparations was investigated. Lipase and protease enzymes were recovered from 5-day old fermentation medium by precipitation with ammonium sulfate. Gel filtration of enzyme mixtures on Sephadex G-75 and Sephadex G-100 resulted in a nearly complete resolution of lipase and protease. The method appeared suitable for preparation of lipase-free fungal rennet.
