S1-casein ANew Zealand Dairy Research Institute, Palmerston North, New Zealand
ABSTRACT
A method was developed for the preparation of
S1-casein A from whole casein containing the mixed variant
S1-casein AB. It involved selective degradation of
A1-casein B by pepsin or rennet and isolation of
A1-casein A from the mixture of degradation products by DEAE-cellulose chromatography.
