ABSTRACT
The effect of mastitis on protein distribution in individual quarter milk samples was investigated by densitometric measurement of polyacrylamide gel electrophoresis patterns of proteins. Wisconsin Mastitis Test positive (>20mm) milks contained relatively higher concentrations of bovine serum albumin, proteose peptone, immunoglobulin,
s- and
-caseins and lower concentrations of ß-lactoglobulin and ß-casein than the corresponding negative (Wisconsin Mastitis Test <10mm) milks. There was no change in the distribution of
-lactalbumin. Unidentified fast-migrating bands were apparent in both whey protein and casein fractions from positive milks.
