Isolation and Identification of Stimulatory Substance Involved in the Associative Growth of Cheese Cultures

ABSTRACT

The stimulatory material produced in milk by two strains of Streptococcus cremoris (KH and HC) which enhanced the rate of acid production by S. cremoris R6 in milk has been identified as guanine by ultraviolet spectral analysis and other properties. Pure preparations of purines like adenine, guanine, and guanosine behaved similarly and enchanced acid production and proteolysis in milk by S. cremoris R6.
