ABSTRACT
Odorous compounds in acidic and nonacidic fractions of a diethyl ether extract of sterile concentrated skimmilk were investigated by gas-liquid chromatography and mass spectrometry. Twelve compounds not previously observed in sterile milks are reported. Reactions other than those usually associated with changes in sterile milks during production and storage may form off-flavors in these products.
