Inhibition of Growth of Alcaligenes viscolactis By Some Common Food Preservatives

ABSTRACT

The ability of various concentrations of several common food preservatives to inhibit growth of Alcaligenes viscolactis in skimmilk was determined. The most effective inhibitors were sodium benzoate and potassium sorbate, with almost complete inhibition at 2.0 and 3.0 mg/ml. Nitrofurazone and ethylenelaminetetraacetic acid inhibited growth only slightly at concentrations up to 25 {varepsilon}g and .6 mg/ml. Propyl-p-hydroxybenzoate up to .6 mg/ml did not detectably inhibit growth of A. viscolactis in skimmilk.
