Modification of the Prill and Hammer Method for Determining Diacetyl

ABSTRACT

A rapid method of steam distillation to recover diacetyl from milk as an alternative to Owades and Jakovac's method (Proc. Amer. Soc. Brew. Chemist. 1963.) is presented. The procedure is simple and shortens the time of analysis by 40 min. However, disadvantageously a known standard must be analyzed for each test. Heating at 45, 75, and 85 C for 1 hr resulted in the formation of 40, 68, and 74% dimethylglyoxime; maximum of 86% occurred after 90 min at 85 C. Diacetyl concentration of 1 µg/ml in milk can be recovered.
