ABSTRACT

Volume 2, Food Processing Plant, is a continuation of the unit operations of processes employed in food manufacture. This volume includes subjects such as automatic feeders, blenders and mixers, emulsifying mills, homogenizers, forming and assembly equipment, bake ovens and frying plant, heat-using equipment, retorts and retorting, hydrostatic sterilizers, continous heat exchangers, pasteurizers, refrigeration and air-conditioning equipment, refrigeration design, layout and refrigerated transport. Also included are sections on filling, closing, labeling and packaging as well as auxiliary plant and other facilities.

Within the subjects listed, much equipment and plant processes are covered in great detail. Much of the equipment discussed is very well illustrated in photographs, diagrams and flow charts. Principles involved in design and operation of equipment are excellently covered. The illustrations essentially represent equipment manufactured or sold in Great Britain. However, this does not detract from the value of this book because many pieces of processing equipment are manufactured or sold in both the United States and Great Britain and, generally, the principles of operation are quite similar.
