Elemental Sulfur: Degradation Product of Thiamine in Model Systems1

ABSTRACT

The nature of heat-induced thiamine degradation in an aqueous medium was investigated. Thiamine hydrochloride solutions were buffered to slightly acid and to slightly basic pH and were heated at 121 C for 40 min. Degradation products were extracted with benzene and separated by thin-layer chromatography. A characteristic degradation pattern was observed, with a major degradation product being identified as elemental sulfur.
