By-Products from Milk

H. K. Wilson

University of Illinois, Urbana-Champaign 61801

ABSTRACT

The authors of the first edition of Byproducts From Milk, B. II. Webb and E. O. Whittier are editors of the second edition. Fourteen additional authors contributed to make this an excellent text for students and reference for management, engineers, health officers and other government officials interested in ecology.

Prom Chapter 1, chemistry and nutritional values of Milk Constituents in byproducts from milk by G. C. Nutting to Chapter 14 by W. S. Arbuckle on waste disposal, an in-depth discussion of state of the science and art has been documented by more than a thousand references. This book was not intended to be a complete review of literature. Each author was responsible for selecting references for his own subject matter. This selection was not easy. A complete review of literature might reveal some confusion whereas selection of references might also lead to a biased or incomplete picture.

The chapter on Waste Disposal is timely and a good place to begin pursuing the subject.
