Nels Ejner Fabricus 1904–1970

ABSTRACT

Dr. Nels Ejner Fabricius, affectionately known as "Nick" to his many friends, passed away on November 26, 1970. The dairy industry lost in him an accomplished professional, a dynamic leader, and a colorful personality.

Nick Fabricius was born on July 20, 1904, in Audubon, Iowa. He attended Iowa State College and earned all his degrees from that institution, including the Ph.D. in 1936. While a graduate student he also worked as an instructor in the Department of Dairy Industry. During this period, a group of research workers at Iowa State, under the direction of the late Dr. B. W. Hammer, studied the properties of lactic A A N. E. Fabricius cultures and their role as a source of butter flavor. Nick was a member of that group and demonstrated in his churning experiments how properly selected lactic cultures could be used to enhance the flavor of butter.
