Origin of the Milk Fat Globule Membrane

ABSTRACT

Compositional analyses of milk fat globule membrane revealed that it differs from plasma membranes chiefly in that it contains higher levels of neutral lipids, particularly triglycerides. Previous work has shown that phospholipids and proteins of the fat globule and plasma membranes are virtually identical. Electron microscopic examination revealed a layer of material bound to one face of the isolated milk fat globule membrane. This bound material appears to be neutral lipid derived from the fat globule. This neutral lipid coating along one face of the membrane appears to be responsible for the morphological and compositional differences observed between the milk fat globule membrane and plasma membrane.
