Influence of Mastitis on Properties of Milk. VI. Buffer Capacity1

ABSTRACT

The effect of mastitis on the buffer capacity of milk was investigated with individual quarter samples. Buffer capacity was calculated in the acid range from titration curves. The maximum (dB/dpH = 0.032) was the same for both Wisconsin Mastitis Test positive (WMT > 20 mm) and negative (WMT < 10 mm) samples. Maximum buffer capacity of the WMT positive samples was in a slightly higher pH range. This was due to a higher initial pH. The difference in pH of the positive and negative samples was relatively constant throughout the titration curves.
