Phenotyping Milk Proteins: A Review

ABSTRACT

A variety of methods for phenotyping whey proteins and the caseins is summarized. The writer suggests what he believes are the best methods for phenotyping genetic variants of the milk protein system depending upon the availability of apparatus. No single method has yet been devised to simultaneously type the variants of {alpha}s1- and ß-caseins
