Acceptance and Consumer Preference Testing

ABSTRACT

Preference testing is the most important approach in sensory evaluation, since it represents the summation of all sensory perception and judgment evaluations on the part of the consumer. Important considerations in preference determinations are: type of panel (laboratory or field); type of judge (experienced or inexperienced); judgment required (single or multiple use); practical decisions and interpretation. Specific techniques for consumer acceptance testing include ranking, paired comparison, rating scales, the eye camera, trend-rating, perceptual devices, and semantic differential tests. Factors influencing panel selection are availability, prior knowledge or training, attitude, and number. Considerations in statistical design and questionnaire reliability also are discussed.
