ABSTRACT
In the United States we are not accustomed to thinking in terms of shortages of protein. We seldom think in terms of protein at all except to think of meat, milk, eggs, or fish. Those who deal in commodities think in terms of such commodities as soybeans or soybean meal, cottonseed meal, peanut meal, fish meal, and meat scrap when they are thinking of protein. In the United States, we have ample supplies of protein. One may wonder, then, why we should be particularly concerned about other sources of protein than the ones which we have already mentioned. There are several reasons why new sources of protein are needed even in the markets such as the United States where protein supplies are plentiful.
