ABSTRACT
Introduction
This is the seventh Symposium in succession organized by the International Relations Committee of the American Dairy Science Association. These symposia have been arranged to promote better mutual understanding of educational and research problems in dairying throughout the world, and the opportunities for milk and milk products in meeting food needs. As you know, the FAO and other international agencies have played and are continuing to play effective roles in nutrition in the developing countries.
Because of the importance of the world food problem, especially protein malnutrition, the committee selected as its theme this year, Development of High Protein Foods to Meet the Needs of the World.
Obviously, there are many sources of protein. Their consumption and source pattern vary widely in different countries of the world. Therefore, our objective this afternoon is to present information on some of these important sources, including milk products, along with some of the problems that are involved between production and consumption of new protein foods.
