Turbidimetric Methods for Measuring Fat Content of Homogenized Milk1

ABSTRACT

Homogenized milk can be analyzed for fat by light scattering with the same apparatus used for protein determination by dye binding. A separate standard curve may be needed for each homogenizer, since the slope of the curve when absorbance is plotted against per cent fat depends on the homogenization efficiency.
