ABSTRACT
Low molecular weight amino compounds derived from
-casein by sterilization and during storage were identified with an amino acid analyzer and by thin-layer chromatography. Ammonia and a small amount of cysteic acid were detected. Ammonia was derived mainly from amides by heat degradation, and cysteic acid by oxidation of cystine in
-casein. Also, a decrease in histidine residues in the protein fraction of stored
-casein was observed
