Sialic Acid Content of Bovine Milk and Its Relation to Lipase Activity

ABSTRACT

Twenty-seven milk samples were obtained from each of three cows, then lipase activities and sialic acid contents of these 81 samples were measured in duplicate. There were large variations in sialic acid content among cows and among samples from the same cow (P < 0.01). The correlation coefficients for lipase activity versus sialic acid for the three cows were –0.10, –0.22, and –0.29. Consequently, lipase activity of these milk samples could not be predicted from the sialic acid content.
