Improved Nonmechanical Method for Estimating Dispersibility of Nonfat Dry Milk

ABSTRACT

A nonmechanical method of determining dispersibility of nonfat dry milk is described which is not tied to a specific commercial apparatus. Dispersibility is determined by moving a teaspoon rapidly twenty-five times across the diameter of a beaker. The mixture is poured through sieves and amount of dry milk dispersed is determined by a hydrometric method. A table is supplied so that the per cent dispersed can be read from the temperature and hydrometer reading of the filtrate. Instant nonfat dry milk should be 80% or more dispersed by this method.
