ABSTRACT
This is the best book yet published in the field of dairy chemistry. When Fundamentals of Dairy Science by Associates of Lore A. Rogers of the U. S. Department of Agriculture first appeared in 1928, it was so far ahead of any book that it remained for many years the authority for those working in dairy chemistry and related technology. The present volume, designed as a successor to Fundamentals of Dairy Science, will fill a similar role in the next decade.
The editors have made outstanding contributions to research in dairy chemistry. Byron Webb is Chief of the Dairy Products Laboratory of the U. S. Department of Agriculture in Washington and Arnold Johnson retired in 1966 as Director of Research for the National Dairy Products Corporation at Glenview, Illinois. Dr. Johnson had served this corporation for 35 years in many positions. Most of the fourteen chapters in the book are contributed by specialists; the uniformity with which a high standard of treatment is maintained must be credited to Webb and Johnson.
