Distribution of Lipase in Milk Proteins. II. Dissociation from {kappa}-Casein with Dimethylformamide1

ABSTRACT

The distribution of lipase among milk proteins was investigated by chromatography on DEAE cellulose and filtration through Sephadex G-200. Protein components were identified by electrophoresis in starch gel containing 7 M urea. The effect of the dissociating agent dimethylformamide on distribution of lipase was studied. Results showed that the lipase in milk is normally associated with {kappa}-casein but can be dissociated from it. It is concluded that lipase is a discrete minor component of the casein system.
