Turbidimetric Method for Milk Fat Determination

ABSTRACT

Turbidimetric fat testing methods are receiving much attention. Light scattering theory has led to the derivation of several formulae (1, 3, 5), provided optical path length, dilution of the milk, refractive indices, and densities of fat and plasma are considered to be constant. For a hypothetical uniform milk in which all fat globules have the uniform diameter d, then for fat content F, we may state that the turbidity, expressed as optical density E (absorbance) is given by, E = constant FK/d [1] The light scattering coefficient K is a function of d/{lambda}, where {lambda} is the wavelength of the incident light. (See Fig. 1, Curve a.)

Recently, Haugaard (2) proposed an interesting new method. Under prevailing circumstances we obtain single maximum in K and consequently in E by varying {lambda}. In that case the values of K and of d/{lambda} are fixed and known from theory.
