ABSTRACT
The udders of lactating dairy cows were exposed to Co60 gamma irradiation in a study designed to elucidate the effect of ionizing radiation on the activity of four milk enzymes. Dose levels ranged from 750 to 1,800 r. Milk lipase and esterase activities were depressed, lactoperoxidase activity unchanged, and alkaline phosphatase activity markedly enhanced. The threshold dose appeared to lie between 500 and 750 r. The discrepancy between dose levels required to produce enzyme inhibition in fresh milk and in milk produced by irradiated mammary tissue is noted and discussed.
