ABSTRACT
Tropical America is in great need of dairy products. With the exception of Nicaragua and Costa Rica, which are self-sustaining, large quantities of whole and skimmed milk powder and butter are imported into the other Central American countries, especially El Salvador and Guatemala; whereas, Panama imports large quantities of butter.
With establishment of the Central American Common Market, there is a great opportunity for developing the dairy industry in these countries. Since there will be more commercial products exchanged among them, importations from countries outside the block will be restricted.
However, if an adequate supply of milk and dairy products is to be obtained, certain improvements in quality of cattle, in production methods on the farms, in processing and packaging and distribution of the various dairy products will be necessary. This will require time and effort, but should be achieved within a few years. Costa Rica, furthermore, seems to be ahead of its Central American neighbors in the development of the dairy industry and, since its history and progress are more familiar to us, special reference will be made to it throughout the course of this dissertation.
