Milk Products and Processing in South Asia

ABSTRACT

Conclusion: The average consumption of fluid milk in India is only about 57 g per day and much of this is used in tea and coffee.

Considerable progress in processing has been made during the past 15 yr and some dairy plants are as modern as any in the world today. There are no insurmountable problems in developing a satisfactory industry. However, when raw milk costs Rs. 26–40.00 per maund ($6.50 to $10 per 80 lb) and bottled toned milk costs Rs. 1.00 (25c) per liter, this places milk outside the budget of the common South Asian, who has a yearly income of about Rs. 400. Consequently, the economie factors far outweigh the environmental factors.
