ABSTRACT
The Smith-Lever Act is responsible for the development of the Extension Service. It was enacted in 1914. The outline of the responsibility of the Extension Service gives the following: "To diffuse among the people of the United States useful and practical information on agriculture and home economics and to encourage the adoption of the same."
In the past, the work of the Extension Service has been largely information to the agricultural interests. The Extension Service has an obligation, however, to all the people. Marketing specialists and processing controls are necessary for the best conditions of the agricultural economy. By encouraging the sale of dairy products, we improve agriculture and thereby improve the dairy industry. No phase of our national economy has progressed as rapidly as agriculture during the last 20 yr.
WHY DO PEOPLE DRINK MILK?
It is a well known fact that people eonsume large quantities of dairy products, but it has sometimes been vague as to why the public prefers or accepts some products over others.
