Facts, Fallacies, and Conflicts Affecting the Demand for Dairy Foods

ABSTRACT

INTRODUCTION

In preparation for this 55th annual meeting of the American Dairy Science Association, your Program Planning Committee wisely decided that the role of milk and dairy products in human nutrition should command the undivided attention of the entire membership during this afternoon symposium. The necessity for an authoritative review is evident to all of us, in light of articles appearing in the literature and in the public press. Since the entire industry looks to members of this body for well-informed commentary, it is appropriate that we refresh ourselves on dairy nutrition and be kept abreast of current findings which may escape us as we pursue avenues of inquiry that may not permit us to be as well posted as we all might desire.

Your committee was fortunate to obtain three distinguished authorities to participate in this symposium. They will each present brief introductory statements, which will be published in the Journal of Dairy Science, and then stand ready to answer questions from the moderator and the audience.
