The Protein and Non-Protein Nitrogen Fractions in Milk. I. Methods of Analysis1

ABSTRACT

Methods have been described for determination of total nitrogen casein, albumin, globulin, proteoses-peptones, non-protein nitrogen, ammonia, urea, creatinine, creatine, uric acid and alpha-ammo nitrogen in milk.

Bulk milk samples were analyzed fresh and after holding at 0 to 5° C. for 10 days (toluene preserved). No significant change was observed in the nitrogen distribution during this aging.
