Studies on Milk Proteins. II. Colorimetric Determination of the Partial Hydrolysis of the Proteins in Milk

ABSTRACT

Conclusion: A rapid colorimetric method can be used to measure minute amounts of milk protein hydrolysis. It is a very sensitive and a practical method for showing protein hydrolysis.
