Colorimetric Determination of Ammonia in Milk and Dry Products of Milk

ABSTRACT

A colorimetric method is described for the determination of ammonia in fluid milk and in dry products of milk based upon the reaction of ammonia with alkaline phenol and sodium hypochlorite. A statistical analysis of data for one sample of fluid milk shows an average deviation from the mean of 0.016 mg./l00 ml. and a standard deviation of 0.026 mg./l00 ml., indicating satisfactory reproducibility.

The ammonia content of some dry milk products and fluid milk varies considerably with dry whey solids having the highest ammonia content.
