The Determination of Total Solids in Liquid Dairy Products by Drying with Forced Heated Air. II. Results with Ice-cream Mix andSweetened-condensed Milk*

ABSTRACT

Conclusions: The Dietert Moisture Teller, an apparatus employing forced heated air, is capable of drying ice-cream mix, sweetened-condensed whole milk and sweetened-qondensed skim milk conveniently and reasonably accurately for the purpose of determining the total solid content. The results obtainable with the procedures given are more accurate than the commonly used Mojon-nier techniques when the "Official.Method" for sweetened-condensed milk is used as a standard of comparison.

The data shown raise a question as to whether the Mojonnier procedure as commonly used for ice-cream mix should not specify a longer drying period, as has been found necessary in the case of sweetened-condensed milk.
