A Diacetinase in Bovine Mammary Gland Tissue*

ABSTRACT

The data obtained indicate that the enzymes which attack diacetin and tributyrin are different even though the structure of the two compounds is somewhat similar.

Since diacetin is not known to be a constituent of blood, the presence of an enzyme in mammary gland tissue which will hydrolize it may not be important. Probably the very active enzyme which was found actually hydrolizes some other compound which is quite similar to diacetin in structure.
