The Use of Ultraviolet Rays in the Cheese Factory and Storage Room1

ABSTRACT

Conclusions: Ultraviolet light emitted from the 15-watt low-pressure mercury-vapor lamps has not proved effective in decreasing air-borne mold spores in the cheese curing room. Direct irradiation has failed to prevent mold growth on the surface of the cheese.
