Determination of Carotene and Vitamin A in Milk

F. R. Olson, D. M. Hegsted and W. H. Peterson

Department of Biochemistry, College of Agriculture, Madison, Wisconsin

ABSTRACT

A method has been developed for determination of carotene and vitamin A that can be applied directly to milk. The results check well with those obtained when butterfat is used as the starting material.

Milk can be stored or frozen for considerable periods without affecting the carotene or vitamin A content.
