Stability of Carotene in Green Grasses and Alfalfa Stored at Five Degrees Fahrenheit1

ABSTRACT

Carotene analyses of green alfalfa and green grasses before and after storage at 5° F. for 10 months show:

  1. Alfalfa loses a large percentage of its carotene content.
  2. Kentucky blue, orchard grass, meadow fescue and brome lose little or no carotene.
